Mom T. got this recipe off a local TV show one day when Chef Tell was demonstating how to make it. Ingredients:
5 tablespoons butter, divided |
3 cups onions, thinly sliced |
1/2 cup dry white wine (optional) |
1 garlic clove, minced |
salt and pepper |
6 cups beef broth |
1 cup garlic-flavored croutons |
1/2 cup parmesan cheese, grated |
1/2 cup gruyere cheese, grated |
Directions:
1. Melt 3 Tablespoons butter in heavy saucepan and add onions. 2. Saute over low heat until golden brown. 3. Add white wine, garlic, salt and pepper to taste. 4. Cook for a few minutes to reduce wine by half. 5. Add beef broth; stir well and cook for 20 to 30 minutes. 6. Preheat oven to 350 degrees Fahrenheit. 7. Pour the soup into individual, oven safe, bowls. 8. Top with garlic croutons. 9. Mix Parmesan and Gruyere cheeses together; sprinkle evenly over croutons. 10. Dot each with the remaining butter. 11. Bake until golden brown. 12. Serve immediately. |
