This is my mom's version of Chicken Kiev and it is killer! Flour and bread crumb amounts are an estimate as I just dump them on a plate to dredge. Prep time includes chilling time. Ingredients:
8 boneless skinless chicken breast halves |
1/8 teaspoon salt |
1 tablespoon green onion, chopped |
1 tablespoon parsley, chopped |
1/4 lb butter, chilled and cut into 8 finger length sticks |
1/4 cup flour |
1 egg, beaten |
1 tablespoon water |
1/2 cup fine breadcrumbs |
Directions:
1. Place chicken breasts between 2 sheets of clear plastic wrap and pound to flatten to 1/4 thick. Remove plastic. 2. Sprinkle each brast with salt and place green onion and parsley on it. Place butter piece at end of each chicken breast and roll jell-roll style, pressing ends to seal. Secure with a toothpick. 3. Beat egg and water. Dip breasts in flour, then egg and water mix, then bread crumbs. Chill 1 hour. Deep fry 5-10 minutes until brown. |
