Another of my Mother-in-laws wonderful recipes. She uses Ortega canned chili peppers. Ingredients:
12 green chili peppers |
1 large tomato |
1/2 teaspoon salt |
12 coriander seeds |
1 1/2 lbs lean beef, cut into 1 ' 2-inch cubes |
1/2 cup flour, to dredge meat in |
2 tablespoons shortening |
1/2 teaspoon salt |
1 medium onion, minced |
1/8 teaspoon garlic powder |
1/2 teaspoon cumin |
1/2 teaspoon oregano |
1/2 cup water |
1 cup tomato, diced |
Directions:
1. Push chilis through a colander. Mash tomato into the chili pulp and add salt. Crush the coriander seeds and add. Set aside. 2. Dredge beef in flour and brwon in hot shortening. Add remaining ingredients and simmer until tender, about 1 hour. |
