Molly's Lemon Summer Picnic Cake |

This is a great light summer time cake. Ingredients:
1 (18 ounce) package lemon cake mix |
1 (3 ounce) package lemon gelatin (lemon jello) |
1 teaspoon lemon zest or 1 teaspoon lemon extract |
3 eggs |
3/4 cup oil |
1 cup water |
1/3 cup butter, melted |
1 cup powdered sugar |
6 tablespoons fresh lemon juice (thawed, or 4 tablespoons lemonade concentrate plus 2 tbsp water, thawed) |
Directions:
1. Mix all cake ingredients together beating for 4 minutes and bake in a greased 9x13 inch pan for 35-45 minutes at 350 degrees. 2. Poke holes in warm cake with a fork and drizzle topping over. Cool and serve. |
