makes 4 3/4 cup servings. Adjust the chili powder to taste (original recipe called for 5 T!). Serve over chicken, enchiladas, burritos. Ingredients:
4 1/2 cups vegetable broth, chicken flavor |
3 tbs olive oil |
1 cup onion, chopped fine |
3 tbs garlic, minced |
1 tsp dried oregano |
1 tsp cumin |
1/4 tsp cinnamon |
2 1/2 tbs chili powder |
3 tbs flour |
2 oz dark chocolate |
Directions:
1. Grate or chop up the chocolate so it will melt later on. 2. Heat oil in large saucepan over medium low heat. 3. Add onion, garlic, oregano, cumin, and cinnamon. Cover and cook until onion is almost tender, stirring occasionally (about 10 min.). 4. Mix in chili powder and flour, stir for 3 minutes. 5. Gradually whisk in chicken broth. 6. Increase heat to medium high and boil until reduced, about 35 minutes, stirring occasionally. 7. Remove from heat and whisk in chocolate. Season with salt and pepper if desired. |
