These always go well at bake sales. Great for brownbag lunches. Ingredients:
2 3/4 cups flour |
1 teaspoon baking soda |
1/2 teaspoon salt |
1/2 teaspoon cinnamon |
1/2 teaspoon ground ginger |
1/2 cup butter |
3/4 cup sugar |
2 eggs |
2/3 cup molasses |
1/2 cup milk |
1/2 cup butter |
3 cups confectioners' sugar |
1 1/2 teaspoons ground ginger |
2 -3 tablespoons milk |
1/4 cup molasses |
Directions:
1. Preheat oven to 375 F degrees. 2. Cookie: Cream butter, sugar and eggs until fluffy. 3. Add molasses and milk. 4. blend well. 5. Mix in sifted dry ingredients. 6. Chill for 2 hours in fridge. 7. Drop by tbls. 8. unto greased cookie sheet. 9. Bake 10 minutes. 10. Remove and cool on racks. 11. Filling: Whip butter and sugar until fluffy. 12. Slowly add milk/molasses and incorporate. 13. Add spice and beat well. 14. Use as filling between two cookies. |
