These spicy cookies always remind me of fall. They are great with a cup of coffee or hot cider. Ingredients:
1 1/3 cups shortening ; melted |
2 cups sugar |
1/2 cup molasses |
2 eggs |
4 1/2 cups flour |
3 1/2 teaspoons baking soda |
1 teaspoon ground cloves |
1 teaspoon ground ginger |
1 teaspoon salt |
2 teaspoons cinnamon |
1/2 cup sugar ; for coating cookies |
Directions:
1. Combine melted shortening, 2 cups sugar and molasses; add eggs. 2. Stir together remaining ingredients, then gradually blend into molasses mixture. 3. Chill in refrigerator. 4. Scoop out dough using #40 scoop or roll into 1 balls. 5. Roll in sugar and place on ungreased baking sheets. 6. Bake at 350 degrees for 11 to 12 minutes. DO NOT OVERBAKE. They should still be puffed and look a little underdone when you take them out, they finish cooking as they cool. 7. Let stand on baking sheet for a minute, then remove to wire rack to finish cooling. 8. Makes 4 1/2 dozen cookies. |
