Ingredients:
2 1/2 cups all-purpose flour
1 cup quick-cooking oats
3/4 cup sugar
1/4 cup toasted wheat germ
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup finely chopped pitted prunes
1 cup low-fat buttermilk
1/2 cup light ricotta cheese
3 tablespoons vegetable oil
2 tablespoons molasses
1 tablespoon vanilla extract
2 large eggs
cooking spray
Directions:
1. Preheat oven to 400°.
2. Combine first 8 ingredients in a large bowl. Stir in prunes; make a well in center of mixture. Combine buttermilk and next 5 ingredients (buttermilk through eggs); stir well with a whisk. Add to flour mixture, stirring just until moist. Spoon batter into 18 muffin cups coated with cooking spray.
3. Bake at 400° for 18 minutes or until done. Remove from pans immediately, and cool on a wire rack.
