Gluten-free, vegan, made with nut flour/meal. They taste like a normal cookie! We can't stop eating them. Ingredients:
2 cups dried coconut, medium-shred |
2 cups almond meal |
1 cup walnut meal |
3/4 cup raisins |
1 teaspoon baking soda |
1 banana, mashed |
1/2 cup molasses |
Directions:
1. Mash the banana, mash in the molasses. 2. Mix the dry ingredients, then add them to the mashed banana/molasses mixture. 3. Form the batter into 2-inch-diameter balls, squeeze a little to stick them together. Use olive oil on your hands if it is too sticky. 4. 35 minutes at 350 degrees F. |
