This muffin lends itself to any addition of fruit and nuts. Molasses is the secret ingrdients to the flavcors Ingredients:
1 pound butter, room temperature |
2 1/2 cups brown sugar |
7 ounces molasses |
5 eggs |
6 1/2 cups flour |
1 teaspoon baking soda |
1 teaspoon baking powder |
1 cup buttermilk |
1 to 2 cups fruit (fresh or frozen berries, apricots, peaches, banana) |
1 cup nuts |
Directions:
1. In a large mixing bowl, cream together butter and brown sugar. 2. Add remaining ingredients, mixing well after each addition. 3. Spray muffin tins with nonstick spray. 4. Fill cups almost to top. 5. Bake at 325 degrees for 30 to 35 minutes. 6. Yield depends on size of muffin tins |
