Dark molasses gives these muffins a wonderful flavor similar to gingerbread. Ingredients:
1 1/4 cups unprocessed wheat bran |
1 cup all-purpose flour |
2 teaspoons baking powder |
1/4 teaspoon baking soda |
1/2 teaspoon ground cinnamon |
3/4 cup unsweetened applesauce |
1/2 cup fat-free milk |
1/3 cup dark molasses |
1/4 cup egg substitute |
1 tablespoon vegetable oil |
1/2 cup raisins |
cooking spray |
Directions:
1. Preheat oven to 400°. 2. Combine first 5 ingredients in a bowl; make a well in center of mixture. Combine applesauce and next 4 ingredients; add to dry ingredients, stirring just until moistened. Stir in raisins. 3. Spoon batter into muffin pans coated with cooking spray, filling two-thirds full. Bake at 400° for 18 to 20 minutes or until golden. Remove from pans immediately, and place on a wire rack. |
