Excellent muffin of substance without dryness or heaviness. Perfect for the freezer and defrosted for a quick breakfast. Ingredients:
1 cup rolled oats |
1 cup wheat germ (try 1/2 c. ea. oat or wheat bran or wheat germ) |
1/2 cup soy flour |
1 cup whole wheat flour |
1/2 cup flax seed meal (ground flax seeds) |
1/2 cup powdered milk |
1 teaspoon salt |
2 1/2 teaspoons baking powder |
1/2 cup canola oil |
1 cup molasses |
1 1/2 cups milk |
2 eggs |
Directions:
1. Beat eggs; measure remaining liquid ingredients and blend. Add oats & stir. Measure & add all other dry ingredients on top; blend all together just until moistened. Bake in sprayed muffin cups at 375* for 18-20 minute. |
