These molasses-barbecued chicken drumsticks have a delightful kick thanks to the horseradish, chili sauce and spicy vegetable juice. Ingredients:
1/4 cup spicy-hot vegetable juice |
2 tablespoons chili sauce (such as heinz) |
1 tablespoon molasses |
2 teaspoons red wine vinegar |
1 teaspoon dijon mustard |
1 1/2 teaspoons prepared horseradish |
1 garlic clove, crushed |
8 chicken drumsticks, skinned (about 1 1/2 pounds) |
cooking spray |
Directions:
1. Prepare grill. 2. Combine vegetable juice and next 6 ingredients (juice through garlic) in a small saucepan; bring to a boil. Reduce heat, and simmer 5 minutes, stirring constantly. Remove from heat. 3. Place the chicken on a grill rack coated with cooking spray. Grill for 30 minutes or until done, turning frequently. Baste the chicken frequently with sauce after 15 minutes. Yield 4 servings (serving size: 2 drumsticks). |
