The traditional accompaniments which should be served with each meal in Iran. Mokhalafat varies between regions and probably between families but here are some core ingredients: fresh herbs, pickled vegetables, fresh tomato and cucumber and flat bread. Ingredients:
1/2 bunch fresh mint (chopped) |
1/2 bunch fresh dill (chopped) |
1/2 bunch fresh parsley (chopped) |
2 tomatoes, sliced |
2 cucumbers, sliced |
gherkins or pickled cucumber |
pickled baby carrots (torshi-havij) |
sugar pickled garlic |
fresh herb, basil, corriander (cilantro) |
flat bread (such as lavash or barbari) |
white cheese (if you're not a vegan) |
yogurt (if you're not vegan) |
sliced raw onion |
wedges lemon |
walnuts |
dates |
other pickle (such as pickled cauliflower, turnip, radish or eggplant) |
fresh radish |
Directions:
1. You don't really need instructions for this one - just serve along with your main dishes as accompaniments. You can place the herbs in small piles next to the sliced vegetables. Arrange to be pleasing to the eye. |
