Everything you love about a Mojito except the rum! After having a few friends over for some mojitos, I was in the mood for salad the next day and had all the right ingredients -- better than the hair of the dog!
Ingredients:
2 limes, zested and juiced
2 romaine hearts, chopped
2 granny smith apples - peeled, cored, and cut into chunks
1/2 cup chopped cucumber
1/3 cup chopped fresh mint
1/4 cup simple syrup
2 tablespoons lemon juice, or to taste (optional)
Directions:
1. Combine the lime zest, lime juice, romaine lettuce, apple, cucumber, mint, simple syrup, and lemon juice together in a large bowl; toss to combine.
