Moist & Spicy Coconut Oatmeal Cake |

Super moist and very yummy oatmeal spice cake, with decadent coconut topping. I often get asked to make this for birthdays - every time I make it, the cake pan gets emptied *fast,* and everyone asks if there's more! :) Ingredients:
1 cup oatmeal (regular or quick) |
1 1/2 cups boiling water |
2 eggs |
1/2 cup oil |
1 cup sugar |
1 cup brown sugar |
1 tablespoon vanilla extract |
1 teaspoon baking soda |
1 teaspoon cinnamon |
1/2 teaspoon nutmeg |
1/2 teaspoon allspice |
1 1/2 cups flour |
add oatmeal, mix together |
1/2 cup melted butter |
1 cup chopped walnuts or 1 cup pecans |
1 cup brown sugar |
1 cup coconut |
1 egg |
Directions:
1. Mix Oatmeal and boiling water together first to get things started; Beat together eggs/oil/sugar vanilla, then add the rest and mix well. 2. While the cake is in the oven, make the topping; bake the cake in greased 9 X13 cake pan for 35 - 40 minutes at 350 degrees. 3. Pull the cake out, spread the topping to completely cover the cake surface, and bake 15 - 20 minutes more. This cake tastes great fresh, but gets even better after waiting for a day. 4. Enjoy! |
