Moist & Spicy Coconut Oatmeal Cake

Super moist and very yummy oatmeal spice cake, with decadent coconut topping. I often get asked to make this for birthdays - every time I make it, the cake pan gets emptied *fast,* and everyone asks if there's more! :)
Ingredients:
1 cup oatmeal (regular or quick)
1 1/2 cups boiling water
2 eggs
1/2 cup oil
1 cup sugar
1 cup brown sugar
1 tablespoon vanilla extract
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1 1/2 cups flour
add oatmeal, mix together
1/2 cup melted butter
1 cup chopped walnuts or 1 cup pecans
1 cup brown sugar
1 cup coconut
1 egg
Directions:
1. Mix Oatmeal and boiling water together first to get things started; Beat together eggs/oil/sugar vanilla, then add the rest and mix well.
2. While the cake is in the oven, make the topping; bake the cake in greased 9 X13 cake pan for 35 - 40 minutes at 350 degrees.
3. Pull the cake out, spread the topping to completely cover the cake surface, and bake 15 - 20 minutes more. This cake tastes great fresh, but gets even better after waiting for a day.
