This is a very moist & delicious muffin. Serve either warm or cold. Both ways are equally delicious Ingredients:
3 1/2 cups sifted flour |
3 cup sugar |
2 tsp. soda |
1 tsp. cinnamon |
1 tsp. nutmeg |
1/8 tsp ground ginger |
1 1/2 tsp. salt |
4 eggs beaten |
1 cup veg oil |
2/3 cup water |
2 cups mashed pumpkin |
1 tsp vanilla |
Directions:
1. Sift together all of the dry ingredients. 2. Then in a separate bowl, combine all of the wet ingredients. 3. Mix well. 4. Add the wet to the dry ingredients. 5. Bake at 350 degrees for 20 minutes in a well greased muffin pan 6. *To give it a little kick try adding a half tsp of cayenne pepper to the batter before cooking* It doesn't change the taste, just gives it some unexpected zip |
