After letting it rest out of the pan for 10 minutes, I like to cut a piece from the center where it's slightly undercooked and pudding-like. Ingredients:
1/2 (15 ounce) can pumpkin puree (i add a little extra) |
1/2 cup canola oil (or vegetable oil) |
2 eggs |
1 3/4 cups all-purpose flour |
1 1/2 cup white sugar |
1 tsp ground cinnamon |
3/4 tsp baking soda |
3/4 tsp salt |
3/4 tsp ground all-spice |
3/4 tsp nutmeg (1/2 tsp if using freshly grated) |
1/2 tsp baking powder |
Directions:
1. Preheat oven to 300 degrees F 2. Combine pumpkin, oil and eggs. 3. Sift together dry ingredients and combine the two mixtures, blending thouroughly, but DO NOT over mix. 4. Pour into a greased loaf pan and bake for about an 1 hour. 5. I like mine so slightly underdone in the middle so its pudding like. |
