I know this sounds strange, but these pancakes are so light and fluffy! Almost like crepes. Give it a try...you'll love the result! Ingredients:
1 cup cottage cheese |
6 eggs |
1/2 cup flour |
1/4 teaspoon salt |
1/4 cup oil |
1/4 cup milk |
1/2 teaspoon vanilla |
Directions:
1. Put all the ingredients into a blender or food processor and mix until smooth. 2. Drop the batter by large tablespoons onto a lightly greased skillet or griddle. 3. Flip the pancakes when the first side is slightly brown. 4. Continue cooking until both sides are a nice light brown color. |
