These tender, slightly sweet muffins are a tasty way to round out any meal. The recipe makes a small quantity for a couple or a single person.Mildred Ross, Badin, North Carolina Ingredients:
1/2 cup all-bran |
1/2 cup 2% milk |
2 tablespoons canola oil |
1/2 cup king arthur unbleached all-purpose flour |
2 tablespoons sugar |
1 teaspoon baking powder |
1/4 teaspoon salt |
Directions:
1. In a large bowl, combine the bran and milk; let stand for 5 minutes. Stir in oil. Combine the remaining ingredients; stir into bran mixture just until moistened. 2. Fill greased or paper-lined muffin cups half full. Bake at 400° for 18-22 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Yield: 4 muffins. |
