The applesauce makes these muffins very moist without much fat. Very hearty as a snack or for breakfast. Ingredients:
1-1/4 cups unsweetened applesauce |
1 large egg |
2 tablespoons oil |
1/4 cup honey |
1 cup whole wheat flour |
1 cup white flour |
2 teaspoons baking powder |
3/4 teaspoon baking soda |
1/2 teaspoon cinnamon |
1/4 teaspoon nutmeg |
3/4 cup raisins |
Directions:
1. In large bowl, beat together applesauce, egg, oil, honey 2. Set bowl aside 3. In medium bowl, combine whole wheat, white flours, baking powder, baking soda, cinnamon, nutmeg 4. Add this to the applesauce mixture, stirring just to moisten 5. Sitr in raisins 6. Divide batter into 12 muffin cups 7. Bake at 375 degrees for 20 minutes 8. Delicious and good for you! |
