Moist and Chewy Oatmeal Cookies |

My mom used to make this recipe. The same recipe can be used as a drop cookie without refrigerating. To soften a cookie baked too long, add a slice of bread to the cookie jar. Ingredients:
3/4 cup margarine |
1 cup brown sugar |
1/2 cup sugar |
1 egg |
1/4 cup water |
1 teaspoon vanilla |
1 cup flour |
1 teaspoon salt |
1 teaspoon cinnamon |
1/2 teaspoon baking soda |
1/2 teaspoon clove |
1 cup raisins |
3 cups quick-cooking oats |
Directions:
1. Mix thoroughly shortening, sugars, egg, water and vanilla. 2. Stir in remaining ingredients. 3. Shape into two logs and wrap in waxed paper or foil. 4. Refrigerate for two hours or overnight. 5. Slice into 1/4 inch slices and place on greased baking sheet 1 inch apart. 6. Bake 12 to 15 minutes in a 325 degree oven. 7. Remove from baking sheet immediately. 8. Store in a tightly covered container. |
