My mom makes this dish and loves to tell the history behind it, which is it's an old southern dish. If a neighbor came by the lady of the house would say, Hop on in, John and eat with us, so this dish became known as Hoppin John's. It's simple and tasty.
Ingredients:
1/2 cup onion
1 small garlic clove
2 tablespoons margarine
1/2 cup rice
1 (17 ounce) can black-eyed peas
Directions:
1. Saute onion and garlic; set aside.
2. Cook rice according to directions on box.
3. Combine peas, rice, and sauteed onion and garlic.
4. Heat and serve.
