This dish is my way of preparing a traditional puertorrican dish called mofongo . It is a comfort food in my opinion since every time I prepare it it reminds me so much of home. If you have the time it is a must to try! Read more ! Ingredients:
1 large green plantain or two small ones |
3 large garlic cloves |
olive oil |
vegetable oi(frying) |
1/2 a yellow onion |
salt |
a pilon or in other words a mortar and pestle is recommended |
crispy pork rinds 3-4 pieces ( preferably fresh from a good mexican supermarket) |
Directions:
1. peel the plantain and cut it into aprox. 1 inch pieces 2. fry the plantain pieces until golden, do non let them brown 3. take them out of the fryer and let them rest for 1 min 4. in the pilon place the three gralic cloves, one teaspoon of salt and about 3-4 tablespoons of olive oil and mash them together 5. when the oil and garlic are mashed add the plantain about 3 to four pieces at a time and continue mashing 6. once you basically can't fit more plantain, depending on the size of the mortar, add the pieces of pork rinds and mash them in 7. if it seems to dry you may add a little more oil to the mix 8. mash until you have nice solid lump of plantain 9. then remove from the mortar, garnish and enjoy! |
