Hot and Spicy and Meatless 2 by Dave Dewitt, Mary Jane Wilan, and Melissa T. Stock. Hot bread recipe from Madagascar. It's very spicy. Ingredients:
5 red serrano or jalapeno chiles, seeds and stems removed, minced |
2 cups all-purpose flour |
1 tbs baking powder |
1 tbs curry powder |
1 tsp salt |
1 cup minced onion |
3 cloves garlic, minced |
2 tsp minced fresh ginger |
1 1/2 cups minced watercress |
1 1/2 cups water |
vegetable oil, enough for frying |
Directions:
1. Combine all of the ingredients, except the oil, in a large bowl and mix thoroughly. Cover the bowl lightly with a towel and allow the mixture to stand for 1 hour. 2. Heat the oil in a deep-fryer or a skillet with high sides. Drop the dough by tablespoons into the hot oil without crowding the dough, and fry until the bread is dark, golden-brown. Remove the bread from the pan, drain on paper towels, and repeat the process until all of the dough is used up. Serve warm. 3. Yield: 2 dozen bread balls. |
