I got this recipe from someone who made it for all of our parties. I keep losing it, so I thought that I would put it on RecipeZaar so I would always have it. Ingredients:
1 (11 ounce) can white shoepeg corn |
1 (15 ounce) can black-eyed peas |
2 -3 tablespoons pickled jalapeno peppers |
1/2 cup red bell pepper, chopped |
1/4 cup chopped red onion |
1/2 cup italian dressing |
1/2 cup catalina dressing |
1 bunch chopped cilantro |
Directions:
1. Mix all ingredients together and let sit for at least two hours in the fridge so that all of the flavors can blend. 2. If using jalapeno peppers, I use prechopped, marinated ones I find at the grocery store in the refrigerated section. If you it like spicey, add fresh chopped jalapeno's for more bite. 3. I usually double the recipe because everyone loves it. 4. Serve with tortilla chips for dipping. |
