A healthier version of my moist corn bread Ingredients:
1 cup whole wheat flour |
1 cup yellow cornmeal |
1/4 cup sugar |
1 tablespoon baking powder |
1/2 teaspoon salt |
3/4 cup light soy milk |
8 tablespoons flax seed, milled |
1/4 cup applesauce, no sugar added |
1/4 cup honey |
1/3 cup creamed corn |
2 eggs |
Directions:
1. Heat oven to 400 degrees F. In medium bowl, stir together flour, cornmeal, sugar, baking powder, and salt. Stir in remaining ingredients just until moistened. Pour into 10 cast iron skillet. Bake 30 minutes at 400 degrees. |
