Mock-Tato Salad (Healthy and It Tastes Great!) |

Suitable for low carb, diabetic and even everybody else (who will be surprised how delicious this is!) Ingredients:
5 slices bacon or 5 slices turkey bacon, cooked crisp and crumbled |
1 cup chopped celery |
2 scallions, sliced |
4 small radishes, sliced |
3 hard-cooked eggs, peeled and chopped |
1 cup chopped fat-free cheddar cheese |
12 ounces extra firm tofu, cubed (one box) |
2 dill pickle spears, chopped |
1 tablespoon dijon mustard |
1/2 cup fat-free mayonnaise |
1/4 cup sour cream |
1/4 cup toasted sliced almonds or 1/4 cup toasted sunflower seeds |
3/4 teaspoon salt |
1/2 teaspoon pepper |
Directions:
1. Mix everything except tofu together until it is mixed well. 2. Gently fold in tofu until it is coated. 3. Chill 1-2 hours before serving. |
