Mock-Tato Salad (Healthy and It Tastes Great!)

Suitable for low carb, diabetic and even everybody else (who will be surprised how delicious this is!)
Ingredients:
5 slices bacon or 5 slices turkey bacon, cooked crisp and crumbled
1 cup chopped celery
2 scallions, sliced
4 small radishes, sliced
3 hard-cooked eggs, peeled and chopped
1 cup chopped fat-free cheddar cheese
12 ounces extra firm tofu, cubed (one box)
2 dill pickle spears, chopped
1 tablespoon dijon mustard
1/2 cup fat-free mayonnaise
1/4 cup sour cream
1/4 cup toasted sliced almonds or 1/4 cup toasted sunflower seeds
3/4 teaspoon salt
1/2 teaspoon pepper
Directions:
1. Mix everything except tofu together until it is mixed well.
2. Gently fold in tofu until it is coated.
3. Chill 1-2 hours before serving.
