An easy alternative to the time consuming risotto. A creamy and appetizing dish that goes great with a chicken dinner. Ingredients:
2 cups orzo pasta, uncooked |
1/2 small onion, diced |
2 tbsp extra-virgin olive oil |
2 (14 oz) cans of chicken broth |
2 garlic cloves, finely diced |
salt and pepper (to taste) |
Directions:
1. Heat a saucepan over medium heat, when it has reached full heat, add in the olive oil. Mix in the onion and garlic then cook, stirring until tender, around 3 minutes. Add in the broth, and stir well to loosen any bits that may be in the bottom of the pan. 2. When the broth reaches a boil, add in the orzo pasta. Reduce the heat to low, cover and simmer for 15 minutes, (until pasta has absorbed the liquid). To avoid sticking, stir intermittently, especially towards the end. Season with salt and pepper prior to serving. |
