For those of us who do not do pie crusts, this is for you. Really easy to do. Serve with ice cream or whip cream and you've made a pie!!! Ingredients:
1 cup rhubarb, finely diced |
1/2 cup sugar |
1/2 cup flour |
1 1/2 teaspoons baking powder |
1/4 teaspoon cinnamon |
1/2 cup pecans or 1/2 cup walnuts, chopped |
1 large egg, lightly beaten |
1 teaspoon vanilla |
Directions:
1. Sprinkle sugar over rhubarb in medium size bowl. 2. Sift flour, baking soda and cinnamon over top. 3. Mix in nuts, egg and vanilla until well combined. 4. Spread on a greased 8 pie plate. 5. Bake at 350 for 25 to 30 minutes. 6. Serve warm. |
