Mock Potato/Cauliflower Casserole |

This is a great low-carb recipe. Ingredients:
16 ounces frozen cauliflower |
2 tablespoons butter |
4 ounces cream cheese, softened |
1 lb bacon, cooked and crumbled |
8 ounces shredded cheddar cheese |
green onion |
Directions:
1. Steam or boil cauliflower until totally tender. 2. DRAIN WELL. 3. Mash and add butter and cream cheese. 4. Add remaining ingredients and mix well. 5. Place in a 1 1/2 quart casserole dish. 6. Bake at 350 degrees F for about 35 minutes or until bubbly. |
