I have no clue why this is called Mock Chop Suey. This is an old casserole of Grandma's that is nothing like Chop Suey! One of my favorites... The original recipe clearly states to not use minute rice, but I've used it when didn't have raw rice on hand... Ingredients:
1 lb ground beef |
5 -7 slices bacon, cut into pieces |
1 chopped onion |
1/2 cup raw rice |
2 (10 ounce) cans cream of mushroom soup |
1/2 cup milk |
2 stalks diced celery |
2 finely cut carrots |
salt and pepper |
Directions:
1. Fry bacon slightly. 2. Add beef and onions. 3. Mix ingredients. 4. Bake in covered casserole dish 1 1/2 to 2 hours at 350 degrees. |
