Fresh mozzarella is expensive. I love caprese and came up with this. I use fat-free cottage cheese to make it really low calorie. Ingredients:
1 cup fat-free cottage cheese |
2 tomatoes, chopped |
1 tablespoon chopped fresh basil leaves, or to taste |
1/2 teaspoon salt |
freshly ground black pepper to taste |
2 tablespoons balsamic vinegar (optional) |
Directions:
1. Combine cottage cheese, tomatoes, basil, salt, and black pepper in a bowl. Stir in balsamic vinegar. |
