From Company's Coming. Sounded like a neat recipe. Ingredients:
1 lb carrot, cooked and mashed |
1 lb granulated sugar |
1 lemon, zest of, grated |
1/4 cup lemon juice |
1/8 teaspoon almond extract |
Directions:
1. Combine first 3 ingredients in large saucepan. Bring to a boil on medium heat. 2. Boil uncovered for 5 minutes. Stir continually. Remove from heat, cool to room temperature. 3. Add lemon juice and almond flavouring. Stir. 4. Cool for 15 minutes. 5. Fill containers. Cover. 6. Store in refrigerator 8 to 10 months. |
