My Grandmother would make this every summer, 2 or 3 times during the season. I know if you give it a try you WILL love them!! Ingredients:
4 cups all purpose flour |
2 cups sugar |
1/2 teaspoon salt |
1 1/2 cups very cold butter |

8 cups sliced peeled, zucchini ( surprise surprise ) |
2/3 cups fresh lemon juice |
1 cup sugar |
1 teaspoon ground cinnamon |
1/4 teaspoon nutmeg |
1/2 cup chopped walnuts |
1/2 cup golden raisins |
Directions:
1. In a large bowl, combine the flour, sugar, and salt. 2. Cut in butter until mixture looks like coarse crumbs. 3. Press half of the crumb mixture into a greased 15 -in x 10 in. x 1 in. baking pan. 4. Bake at 375 degrees for 10 to 12 min. or until lightly browned. 5. Set remaining crumb mixture aside. 6. Meanwhile, in a large saucepan, bring zucchini and lemon juice to a boil. 7. Reduce heat; cover and simmer 5-6 min. or until tender. 8. Drain 9. Stir in sugar, cinnamon, nutmeg, and 1/2 cup reserved crumb mixture. 10. Cook and stir 2-3 min. 11. Stir in walnuts and raisins. 12. Spread filling evenly over crust. 13. Sprinkle with the remaining crumb mixture. 14. Bake for 25 to 30 min, or until golden brown. 15. Cool on a wire rack 16. Cut into squares. 17. Enjoy! |
