Believe it or not, there's not an apple to be found! My Dad told me about this pie that my grandmother made the family during war time when apples were scarce. I didn't believe him, but found it - and tried it - and it's really not bad! Read more ! Especially if you don't have any apples on hand, but have that box of Ritz hanging out in the cupboard. Ingredients:
pastry for two-crust 9-inch pie |
30 to 36 ritz crackers, coarsely broken up (about 1 3/4 cups) |
2 tsp cream of tartar |
2 cups water |
2 cups sugar |
grated rind of one lemon |
2 tbsp lemon juice |
2 tbsp butter / margarine |
1/2 tsp ground cinnamon |
Directions:
1. Preheat oven to 425 degrees. 2. Place sugar, cream of tartar and water in saucepan over high heat. Bring to a boil, then lower heat to simmer for 15 minutes. Add grated lemon rind and lemon juice. Allow to cool. 3. If you aren't using the pre-made shells, roll out half the pastry and line a 9 inch pie plate. 4. Place coarsely-broken cracker crumbs in pie crust. Pour cooled syrup over crackers. Dot with butter or margarine and sprinkle with cinnamon. 5. Top the pie with the remaining pastry. Trim, seal and flute edges. Slit top to allow steam to escape. 6. Bake 30-35 minutes or until crust is crisp and golden. 7. Cool completely before serving. |
