Tasty and moist! Tastes a lot like chocolate cake as the coffee flavor doesn't come through super strongly. From: Canadian Living, Make it Tonight. Ingredients:
2/3 cup butter, softened |
1 1/2 cups granulated sugar |
2 eggs |
1 teaspoon vanilla |
1 2/3 cups all-purpose flour |
3/4 cup cocoa powder |
1 teaspoon baking soda |
1 teaspoon baking powder |
1/4 teaspoon salt |
1 1/3 cups brewed coffee, chilled (strong) |
Directions:
1. Make 1 1/3 cups of coffee. Chill until cool. 2. Grease and flour an 8-inch (2L) square metal cake pan. 3. In large bowl, beat butter with sugar until fluffy; beat in eggs, 1 at a time, just until incorporated. Stir in vanilla. 4. In separate bowl, sift together flour, cocoa, baking soda, baking powder, and salt; add to butter mixture alternately with coffee (make 2 additions of dry ingredients and 1 of coffee). Beat until almost smooth. Scrape into prepared pan; spread evenly. 5. Bake at 350F (180C) in center of oven until cake tester inserted in centre comes out clean, 45 to 57 minutes. Let cool in pan on rack. |
