Almost like a cupcake. If you want more chocolate and/or more sweetness, you might try adding chocolate chips. Ingredients:
1 egg |
2 egg whites |
1/2 cup milk |
1 tablespoon instant coffee powder |
1 tablespoon water |
2 teaspoons vanilla extract |
1 1/2 cups all-purpose flour |
1/2 cup malted milk powder |
1/2 cup white sugar |
2 teaspoons baking powder |
1/2 teaspoon salt |
1/2 teaspoon ground cinnamon |
2 tablespoons white sugar |
Directions:
1. Preheat oven to 400 degrees F (205 degrees C). Grease muffin cups. 2. Mix together egg, egg whites, and milk. Stir in coffee powder, water, and vanilla. 3. In a large bowl, mix together flour, malted milk powder, 1/2 cup sugar, baking powder, and salt. Stir in liquid mixture. Mix together really well, until batter is thin and gooey like cake batter. Fill muffin cups 2/3 full. In a small bowl, stir together cinnamon and 2 tablespoons sugar. Sprinkle cinnamon sugar over muffins. 4. Bake in preheated oven for 20 to 25 minutes. |
