Ingredients:
6 oz. of semisweet chocolate chips, divided |
1/2-teaspoon organic coconut oil |
chocolate jimmies |
3 tablespoons half and half |
2 egg yolks, lightly beaten |
2 teaspoons vanilla extract |
1-teaspoon instant coffee granules |
latte cream |
2 teaspoons instant coffee granules |
1-1/2 cups heavy whipping cream divided |
1/3 cup confectioners’ sugar |
Directions:
1. In a microwave safe bowl, melt 1/2-cup chocolate chips with the shortening; stir until smooth. 2. Dip rims of four parfait glasses in chocolate; sprinkle with jimmies. 3. Let stand until set. 4. In a small saucepan, combine the cream, egg yolks, vanilla coffee granules and remaining chocolate chips. 5. Cook and stir over medium heat until mixture reaches 160 degrees or is thick enough to coat the back of a spoon. 6. Cool stirring several times. 7. In a small bowl, dissolve coffee granules in 1 tablespoon of whipping cream. 8. Add remaining cream; beat mixture until it begins to thicken. 9. Add confectioners’ sugar; beat until soft peaks form 10. Fold 1- 1/2 of cream mixture into cooled chocolate mixture. 11. Spoon about 1/4-cup chocolate mousse into each parfait glass 12. Spoon or pipe about 1/4-cup cream mixture over mousse. 13. Repeat layers. 14. Refrigerate at least 2 hours. 15. Garnish with some semi sweet chocolate shavings |
