There's nothing so good and refreshing as mango salsa. I serve mine with tortilla chips or just eat it by itself as a side dish. Ingredients:
2 mangos (preferably honey mangos) - peeled, seeded, and diced |
2 large roma (plum) tomatoes, seeded and diced |
2 large cloves garlic, minced |
1 shallot, minced |
1 green chile pepper, seeded and diced |
1 lime, juiced |
3 tablespoons pineapple juice |
2 tablespoons olive oil |
1 teaspoon salt |
Directions:
1. Stir the mangos, tomatoes, garlic, shallot, green chile pepper, lime juice, pineapple juice, olive oil, and salt together in a bowl; refrigerate 1 hour to allow the flavors to mingle before serving. |
