Mixed Vegetables In Red Beancurd

This is a Must have dish on the 1st day of every Chinese New Year. Omit the chicken stock and it is a vegetarian dish. Substitute the chicken stock with little sugar.
Ingredients:
1) 1/2 kg chinese cabbage
2) 6 cubes of red beancurd
3) 1 tin button mushrooms
4) 10 shitaki mushrooms (soaked) optional
5) 3 ts sugar
6) 2 tb oil
7) 2 cubes of chicken stock
Directions:
1. Fry red beancurd in oil till fragrant. Add Cabbage and stir till it is soft. Add button mushrooms, shitaki mushrooms, and stir fry for 1 minute. Add water till it is 1/2 in above the vegetables. Add sugar and chicken stock and bring it to boil. Turn down heat and let it stew for about 1/2 hour or till the cabbage is limp.
