Mixed Vegetable Casserole |

Ingredients:
1 (16 ounce) package frozen mixed vegetables, thawed |
1 large onion, chopped |
3 celery ribs, chopped |
1 cup shredded cheddar cheese |
1 cup mayonnaise (reduced fat or fat-free can not be substituted) |
3/4 cup crushed butter flavored cracker |
1/4 cup butter or 1/4 cup margarine, melted |
Directions:
1. In a bowl, combine the first five ingredients. 2. Spoon into a greased 1-1/2-qt. baking dish. 3. Toss the cracker crumbs and butter; sprinkle over the top. 4. Bake uncovered at 350 degrees for 30-35 minutes or until heated through. |
