Mixed Salad With Bacon & Blue Cheese |

Mixed salad of spinach and/or watercress. Ingredients:
9 slices bacon (4 ounces) |
1 tablespoon cider vinegar |
1 teaspoon dijon mustard |
1 garlic clove, minced |
1 bunch spinach |
2/3 cup olive oil |
fresh coarse ground black pepper |
2 bunches watercress |
8 ounces feta cheese |
1 avocado |
1 bunch arugula |
Directions:
1. In skillet, cook the bacon over medium heat until crisp. Drain liquid, place on paper towel and crumble. 2. Pour into a small bowl the vinegar, mustard, and garlic. Mix these ingredients first, and then add olive oil and black pepper. 3. In large bowl, toss the spinach, arugula. Pour half of the dressing on the greens and toss. 4. Add the feta cheese, bacon, avocado and the remaining dressing, then toss. 5. Season with pepper. |
