Recipe is from Smithfield. Ingredients:
0.5 (24 ounce) bag frozen mashed potatoes, thawed and coarsely mashed |
0.5 (24 ounce) bag frozen mashed sweet potatoes, thawed and coarsely mashed |
1/2 teaspoon salt |
1/2 teaspoon dried chipotle powder |
1/4 teaspoon fresh ground black pepper |
1 egg, lightly beaten |
1/4 cup flour |
2 tablespoons vegetable oil |
Directions:
1. Preheat oven to 200°F 2. Pour flour into a shallow dish and set aside. 3. Heat vegetable oil over medium high heat in a large skillet. 4. In a large mixing bowl, combine potatoes, salt, chipotle seasoning, pepper and egg. 5. Form the mixture into 8 equal size cakes. 6. Working in batches, dredge potato cakes in flour, add to the skillet and saute for 2 – 3 minutes per side or until golden brown. 7. Transfer to the oven to keep warm and repeat for remaining potato cakes. |
