From Quick Cooking magazine. This is a great treat and different from regular peanut brittle...the variety of nuts makes the difference. Ingredients:
1 1/2 teaspoons butter, plus |
3 tablespoons butter, divided |
1 1/2 cups sugar |
1 cup water |
1 cup light corn syrup |
1 (10 ounce) can mixed nuts (without peanuts) |
1 teaspoon vanilla |
1 1/2 teaspoons baking soda |
Directions:
1. Grease a baking sheet with 1 1/2 t. 2. of the butter; set aside. 3. In a large saucepan, combine the sugar, water and corn syrup. 4. Cook over medium heat until a candy thermometer reads 270F (soft-crack stage), stirring occasionally. 5. Add the nuts; cook and stir until the mixture reaches 300F (hard crack stage). 6. Remove from heat; stir in vanilla and remaining butter. 7. Add baking soda and stir vigorously. 8. Quickly pour onto prepared baking sheet. 9. Spread with a buttered metal spatula to 1/4 inch thickness. 10. Cool before breaking into pieces. |
