Mixed Mushroom Topping for Mini Vegan Pizzas |

from the book Vegan Lunch Box. Use with Vegan Lunch Box Easy Whole-Grain Pizza Dough, or other mini pizza crust. I think this would make a good pita pizza as well. Ingredients:
2 tablespoons extra virgin olive oil |
1 lb mixed fresh mushrooms, cleaned and sliced |
salt |
1/8 cup fresh parsley, chopped |
2 large garlic cloves |
3 -4 tablespoons pizza sauce |
Directions:
1. Preheat oven to 500°F. 2. Heat oil in a large nonstick saute pan over med-high. When hot, add mushrooms and sprinkle liberally with salt. 3. Cook, stirring frequently, until mushrooms have given off their juices and liquid has been cooked away, leaving mushrooms shrunken and rich brown in color, about 10 minutes. 4. Add parsley and garlic and cook, stirring constantly, until garlic has softened, about 3 minutes. 5. Top each pizza crust with half the pizza sauce and half the mushroom mixture. 6. Bake 7-8 minutes, until crust is golden brown and toppings are piping hot. |
