Mixed Greens with Turkey and Cheese Quesadillas |

Recipe found in the July 2009 Seventeen magazine. This recipe calls for HALF A CUP of dressing. But really 2 tablespoons woul be enough for anyone. The mozarella needs to be skim milk variety for this to stay so low in calories Ingredients:
2 oz deli turkey |
1 whole wheat tortilla |
1/4 cup mozzarella cheese |
1 1/2 cups salad |
2 tbsp of italian dressing |
Directions:
1. Place turkey slices on one side of the tortilla. Sprinkle with cheese and fold tortilla in half. Press tightly to secure filling. 2. Coat a nonstick skillet with cooking spray and heat the skillet. Cook the tortilla for 1 minute on each side or until the cheese is melted. Slide the quesadilla onto a cutting board. Slice into three or four triangles. Set aside. 3. Toss the mixed greens with the dressing. Place them in the center of the plate. Arrange the quesadilla triangles around the salad. |
