Notes: You can adapt this quick salad to complement any weeknight meal. Ingredients:
2 tablespoons red wine or sherry vinegar |
2 tablespoons olive oil |
12 cups mixed baby greens (10 oz.) |
2 tablespoons chopped fresh herbs such as chives, tarragon, basil, or a combination |
1 cup miniature cherry tomatoes, such as sweet 100s (about 8 oz.) |
4 ounces goat cheese, crumbled |
salt and pepper |
Directions:
1. In a large bowl, whisk vinegar and olive oil until well blended. Add greens, herbs, tomatoes, and goat cheese and mix to coat. Add salt and pepper to taste. |
