Mixed Greens Tossed In Honey Vinaigrette |

Wonderful salad with goat cheese and fruit in a tasty honey vinaigrette. Recipe courtesy of Savannah Bee Company! Ingredients:
1/4c rice vinegar |
11/2tsp. dijon mustard |
2tbs. honey |
1/4tsp salt plus more for seasoning |
fresh ground black pepper |
3/4c walnut oil |
1(10oz.) package mixed salad greens |
1 mango,seeded,peeled,diced |
1c goat cheese cr,crumbled |
1/2c dried cranberries |
mint sprigs for garnish |
Directions:
1. In a blender,combine vinegar,mustard,honey,1/4tsp salt and some fresh ground pepper. Cover and blend 30 seconds. With the blender runningslowly,add oil in a thin,steady stream(if necessary,atop blender and scrape down sides). 2. In a salad bowl,combine greens,mango goat cheese and cranberries. Add mint sprigs,to likin;drizzle with dressing. Toss gently to coat. Season,to taste,with salt and pepper |
