125 g butter (or margarine) |
1/2 cup white sugar |
1 egg |
2 cups self raising flour |
1 teaspoon cinnamon |
1 1/2 teaspoons mixed spice |
1 cup mixed fruit |
2/3 cup milk |
1 teaspoon malt vinegar |
Directions:
1. Preheat oven to 190 degress centigrade. 2. Thoroughly grease muffin pans. 3. Cream the butter or margarine and sugar in a bowl until light and fluffy. 4. Beat in the egg and combine well. 5. Sift the flour with the cinnamon and mixed spice. 6. Add the vinegar to the milk. 7. Stir the flour, mixed fruit and milk into the creamed mixture. 8. Thoroughly mix ingredients together. 9. Fill greased muffin pans three-quarters full and bake in a moderate oven for 20 - 25 minutes or until risen and golden brown in colour. 10. serve warm or cold. |
